SYRACUSE, N.Y. (WSYR-TV) — The Onondaga County Health Department released its inspection reports for restaurants checked from June 2 through June 8.

Which food services passed or failed their health inspection May 26 – June 1

One food service received an unsatisfactory inspection:

  • Pizza Cutters Catering – 3712 New Court Avenue, Syracuse

Two food services failed their inspection:

  • K.Zumma – 435 North Salina Street, Syracuse
  • TGI Friday’s – 306 Hiawatha Boulevard West, Syracuse (Destiny USA)

Read to see how the establishment received an unsatisfactory or failed their inspection in detail below.

Pizza Cutters Catering

This restaurant received 2 violations, with none in critical condition.

Food not protected in general: The inspector found various food items stored on the ground at the Taste of Syracuse event.

Improper sanitary facilities and controls: The inspector found the temporary hand washing station not set up.

K.Zumma

This restaurant received 2 violations, with both being critical violations.

Foods not protected from contamination, temperatures not measured: The inspector found that a thermometer was not available to monitor the temperatures of TCS foods. This was corrected by a thermometer borrowed from a neighboring stand.

Improper cooling and refrigerated storage of potentially hazardous foods: The inspector found sausage and rice cake skewers at 60-65 degrees Fahrenheit at 11:00 a.m., stored on the table at room temperature. The staff said the sausage was boiled this morning and then assembled on skewers at approximately 5:00 a.m., stacked into plastic containers, and placed into refrigeration units at the commissary. The product was not cooled properly. This was corrected and approximately 30 pounds of food was discarded.

The inspector also found Kimbap stored at 60-68 degrees Fahrenheit in the refrigerator at 11 a.m. Staff said the Kimbap was prepared that morning between 4:30 a.m. and 5 a.m. The meats and raw vegetables were cold and hot rice was mixed to prepare the item. Rolls were assembled and individually wrapped in foil and then placed into the refrigerator. The product was not cooled properly. This was corrected and around 200 rolls were discarded.

TGI Friday’s

This restaurant received 10 violations, with one being a critical violation.

Improper cooling and refrigerated storage of potentially hazardous foods (CRITICAL): The inspector found preparation top coolers — one across from the grill, and another across from the fryer — were not keeping potentially hazardous foods at or below 45 degrees Fahrenheit.

The following food items were noted temping between 49-53 Fahrenheit and had been out of temperature for an undermined amount of time:

  • Sauteed mushrooms: 1/2 pound
  • Corn salsa: 1 pound
  • Bean salsa: 1 pound
  • mango salsa: 1 pound
  • Sliced tomatoes: 1 pound
  • Mayonnaise: 1/2 pound
  • Chicken cutlets: 2 pounds
  • Shrimp: 1 pound
  • Eggrolls: 1 pound
  • Potato Skins: 1 pound
  • Chicken Egg rolls: 1 pound
  • Cream cheese ragoons: 1 pound
  • Chicken Gyoza: 1 pound

This was corrected as all of the listed items were voluntarily discarded and coolers were taken off the line until they could keep food at or below 45 degrees Fahrenheit.

Food not protected in general: The inspector found three boxed large fryer oil containers stored directly on the floor in the dry storage area, improper storage.

Food not protected in general: The inspector found two boxes of single service cups stored directly on the floor in the dry storage area, improper storage.

Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found the facility lacks chemical sanitizing test strips to evaluate sanitizing concentrations.

Improper cleaning, washing and sanitizing of equipment and utensils: The inspector found gaskets, interior bottoms, and drawer shelving on the cook line preparation top coolers with food debris and grease accumulation, and not clean. The exterior of beer lines in the walk-in beer cooler was noted with mold accumulation. Shelving in the walk-in food cooler was noted with mold accumulation, and not clean. Fan guard covers on walk-in beer cooler noted with mold accumulation, not clean.

Improper sanitary facilities and controls: The inspector found cold water was not provided at hand washing sinks. This was corrected and cold water was provided at the time of inspection.

Improper sanitary facilities and controls: The inspector found the hand washing sink by the cook line lacked single-service paper towels. This was corrected by providing paper towels.

Inadequate insect/rodent control: The inspector found small flying insects in high concentrations at the bar and near the automatic dishwashing machine.

Inadequate insect/rodent control: The inspector found floor edges in the dry storage area with an accumulation of oil, not clean. Some floors throughout the kitchen were noted with food debris, not clean. Floors in the walk-in food cooler were noted as not adhered to the ground, in poor repair.

Many locations passed their inspections between June 2 through June 9.
